Start off by adding your Health Riot Cassava Flour, xanthan gum and butter to a food processor/electric mixer and blitz until the mixture resembles bread crumbs. Once done, transfer to a mixing bowl.
Add your egg yolks and xylitol, and work the mixture with your hands.
Add 1 tablespoon of water and work again until the mixture comes together to form a fairly stiff looking dough. If it is still too crumbly, add another tablespoon of water (do only one tablespoon at a time - you can always add more water, but you can’t take it out) and re-work until the mixture comes together.
Cover with clingfilm and refrigerate for 20-30 minutes. Once the butter has hardened in your pastry dough, it is now ready to use.
Roll out your shortcrust pastry between two pieces of wax proof paper, dusted with some Health Riot Cassava flour.
Transfer the dough to your greased pie pan. Push down into the pan to form an even pie crust.
Fill up any holes or cracks with small pieces of dough.
Trim the excess pastry.
Gather the remaining dough and place in fridge to use as the crumble crust when assembling the pie.
Preheat the oven to 180 degrees Celsius.
Melt the coconut oil in a pot on a medium heat.
Add the raw honey, sliced apples and spices.
Cover the apples gently in the liquid.
Add in the coconut flour and mix well.
Lastly add the vanilla extract and turn off the heat, allow to cool for 10 minutes.
Place the pastry crust in the oven for 10 minutes.
Spoon in the apple slices and sauce into the pie crust.
Cover the pie with the remaining dough, by crumbling the remaining dough onto the top of the pie.
Bake for 25 minutes.
Serve hot or cold.
