Gluten Free Cassava Wrap

Delicious, light and super healthy. Our recipe delivers the authentic flavor and soft texture you expect from a traditional gluten free wrap.

What you'll need
 ½ cup Milk
 1 ½ cups Health Riot Cassava flour
 ½ tsp Salt
 3 tbsp Ghee
 1 tsp Xanthan gum
 1 Large Free-range Egg
 100 g Grated Parmesan cheese
Instructions:

Start by bringing your milk, salt and ghee to a simmer in a saucepan. Once the ghee has melted, remove from the heat and whisk in your Health Riot Cassava flour and xanthan gum, then transfer this mixture to a food processor and blitz a couple of times. If you do not have a food processor – place in a bowl and beat with an electric mixer very briefly. Add your cheese and egg, and blitz a few more times until you have a smooth-looking dough. (If using the electric mixer, beat for about 30 seconds until the egg is all incorporated. This will be a crumbly looking dough. Use your hands and knead together easily.) Wrap your dough in clingfilm and chill for 1 hour.

Remove your dough from the fridge, and divide it into 4 smaller balls. Using wax proof paper, shiny side up, dust some Health Riot Cassava flour over it. Place one ball of dough onto this floured wax paper, then press down gently to flatten the dough ball, then dust with more Cassava. Place another piece of wax paper on top, shiny side down, and using a rolling pin, roll the ball out in various directions to get it as thin as you can. Place a small plate on top and cut around the edge to make a neat circle. Dust off slightly then pop into a preheated dry frying pan. Wait until you see the dough start to bubble, then flip over and fry for another minute or so. You want it evenly browned on both sides. Remove onto a clean surface and cover with a slightly damp cloth. Continue with the rest of your dough, placing each wrap on top of the previous one and covering with the damp cloth - this ensures that the wraps continue to steam lightly.

Allow to cool, then fill with your favourite wrap ingredients.
