Traditional Sugar Cookies

A classic that’s delicious anytime on their own - they also make ideal holiday cookies with festively decorated icing!

Traditional Sugar Cookies
What you'll need
 2 cups Health Riot Cassava flour
 1 tsp Baking powder
 ½ tsp Bicarbonate of soda
 ¾ cup Softened, Butter
 1 tsp Xanthan gum
 1 cup Coconut sugar (use regular white sugar if not Paleo)
 1 Free-range Egg
 1 tsp Vanilla extract
 Fun cookie cutter shapes
Royal Icing
 1 Free-range Egg
 1 ½ cups Xylitol, blitzed fine in a coffee grinder
 ½ tsp Lemon juice
Instructions:

Preheat oven to 170 degrees Celsius

In a large bowl, cream the butter and sugar until smooth. Beat in the egg and vanilla extract.

Slowly blend in the dry ingredients and mix until dough forms.

Roll dough out between 2 pieces of wax paper that have flour sprinkled on. Cut out desired shapes with cookie cutters.

Bake for 10 minutes until golden brown. If your cookies are slightly thicker, bake them for 15 minutes.

Leave to cool on the tray for 5 minutes before removing onto a wire rack.

Royal Icing

Put the egg white in a metal bowl, with lemon juice.

Start beating and slowly start adding the xylitol bit by bit. Keep beating until it is a thick, smooth consistency.

Ice cookies and allow icing to harden.
