Rooibos, Honey & Seed Bread

Delicious Cassava gluten free bread with seeds, honey and rooibos.

Rooibos, Honey & Seed Bread
What you'll need
 1 cup Health Riot Cassava flour
 ½ cup Almond flour
 ½ cup Mixed Seeds
 ¼ cup Flaxseed flour
 1 tsp Xanthan gum
 1 ½ tsp Baking powder
 ¼ tsp Allspice
 1 tsp Salt
 ¼ cup Macadamia nut oil
 1 Free-range Egg
 1 tsp Apple cider vinegar
 2 Rooibos teabags, plus one extra
 1 cup Boiling Water
 ½ cup Raw honey
 1 tsp Organic Coconut sugar
 1 packet (10 g) of Active Yeast
Instructions:

Make a nice strong Cup of tea with your two rooibos teabags, boiling water and honey. Let it brew and cool down slightly, then remove the teabags, add in your sugar and dry yeast and allow it to sit for a while until it becomes frothy.

Combine all your flours, contents of 1 rooibos teabag and seeds into a bowl and give them a whisk to combine them all. Whisk together your egg, vinegar and macadamia nut oil, then add this along with your frothy yeast to your dry ingredients. Mix to ensure the mixture is well combined, then pour into a greased loaf tin.

Pop into your oven and bake for around 35 to 40 minutes - the top should be very brown and a skewer should come out clean when inserted into the middle. Remove from the oven and allow to cool before slicing.
