Ultimate Paleo Bread

A dream gluten free bread for those following a Paleo diet.

Ultimate Paleo Bread
What you'll need
 1 ¼ cups Health Riot Cassava flour
 90 ml Coconut milk (or Free-range milk if not Paleo)
 ½ Packet Instant yeast
 1 tbsp Raw honey
 1 tsp Xanthan gum
 ½ tsp Salt
 ½ tsp Baking powder
 2 Large Free-range Eggs
 1 tbsp Olive oil
 ½ tsp Apple cider vinegar
 ½ cup Rapidly boiling Water
Tip
 For bread rolls, place on a baking tray with wax paper greased with olive oil. Get a little extra cassava flour on your hands and carefully place a bread roll sized amount of dough in your hand. Then put a small amount of additional flour on top of the dough. Carefully and gently roll into a bun shape and place on the wax paper. This should make 6 buns. Allow to rest for 30 min and then place in a preheated oven of 160 degrees elsius for 25 minutes.

Warm milk on stove top over low heat, remove when lukewarm, pour into a small container, add yeast and stir. Set aside.

In a mixing bowl, sift all your dry ingredients and stir to incorporate.

Next, add the olive oil, apple cider vinegar and honey. Finely mix this into the dough.

Next, add the rapidly boiling water and thoroughly until mixture is like fine crumbs, (about 2 minutes).

Add yeast mixture and knead for another 2 min.

Lastly, add the eggs and beat well for 4 minutes – this will become a very sticky batter.

Place your bread carefully in a well buttered loaf tin, cover with cling wrap and allow to rest for one hour.

Bake in a preheated oven at 180 degrees celcius for 45 min or until a knife comes out clean.
