Health Riot Rusks

This delicious healthy gluten free rusk recipe will have you snuggling up with a warm cup of tea or coffee.

Health Riot Rusks
What you'll need
 1 ½ cups Health Riot Cassava flour
 1 cup Tapioca flour
 ½ cup Chickpea flour
 5 ml Bicarbonate of soda
 5 ml Baking powder
 5 ml Himalayan Salt
 120 g Xylitol
 200 g Free-range Butter
 1 cup Coconut milk
 1 Free-range Eggs
Instructions:

Preheat oven to 190 degrees Celsius.

Sift flours, Bicarbonate of soda, baking powder, salt and xylitol.

Use your fingers to rub in the butter until it resembles bread crumbs.

Whisk the egg and coconut milk together and add to the flour mix.

Mix lightly until dough forms and spread into a rectangular Pyrex dish, lined with wax paper.

Bake at 190 degrees Celsius for 25 minutes or until risen and golden.

Take out the oven and allow to cool completely.

Cut into fingers, and spread them out on a baking tray at 70 degrees Celsius for 20 hours.(Yip, that long!)

Once they are out the oven and cooled, store in an airtight jar.
