Fluffy Pancakes

Fluffy and delicious gluten free pancakes. These are just like you remember. Serve them rolled up with cinnamon and freshly squeezed lemon

Fluffy Pancakes
What you'll need
 1 ¼ cups Health Riot Cassava flour
 1 ½ tsp Baking powder
 2 tsp Xanthan gum
 ½ tsp Himilayan Salt
 1 ½ cups Milk (Almond or Coconut milk for Paleo)
 1 Free-range Egg room temperature
 1 tsp Raw honey
 3 tsp Coconut oil
Tip
 Serve with hot honey, cinnamon and lemon juice.
Instructions:

In a large bowl, sift together Health Riot Cassava flour, baking powder and himilayan salt.

Make a well in the middle and pour in the milk, coconut oil, and honey. You may need to add more milk to thin out the batter slightly.

Heat a thick based, non stick frying pan over medium heat, lightly oiled with butter or coconut oil.

Pour the batter in the pan using roughly a quarter of a cup for each pancake.

You can turn the pancake once you see the pancake is full of bubbles. Brown on both sides.
