Fluffy Pancakes with Salmon and Avo
These gluten free pancakes are easy to do, and perfect for a healthy lunchbox.

In a large bowl, sift together the Health Riot Cassava flour, baking powder and Himalayan salt.
Make a well in the middle of the dry ingredients, and pour in the milk, melted butter/coconut oil, and honey. You may need to add more milk to thin out the batter slightly.
Heat a thick based, non-stick frying pan over medium heat, lightly oil with olive oil, butter or coconut oil.
Pour the batter in the pan using roughly 1/4 Cup for each pancake.
You can turn the pancake once you see the pancake full of bubbles. Brown the pancake on both sides.
Once the pancakes are all done, mash the avocado and spread on the pancakes. Top this with the salmon.
Roll the pancakes and cut into bite sized pieces for lunch boxes.
