Doughnut Recipe

Delightful tea time doughnuts. They are soft, light and wonderful with any topping.

Doughnut Recipe
What you'll need
 1 cup Health Riot Cassava flour
 ½ cup Finely-blended Xylitol (Castor sugar if not Paleo)
 1 tsp Baking powder
 ½ tsp Himilayan Salt
 1 tsp Xanthan gum
 1 tsp Vanilla extract
 85 g Butter, softened
 1 Free-range Egg, room temperature
 ½ cup Almond or Coconut milk (dairy milk for non Paleo)
 Ghee for frying
 Cinnamon & Xylitol for topping
Instructions:

In a large bowl, sift flour and add finely blended xylitol, as well as baking powder, xanthan gum and salt. Stir to combine.

Add softened butter, egg and milk; beat with an electric hand mixer until the mixture is thick, smooth and creamy.

Preheat a doughnut maker and spoon 1 tabelspoon mixture evenly into each mould. Close the lid and cook for 2 minutes or until the doughnuts are golden brown and soft. If you do not have a doughnut maker, heat 5 tablespoons of ghee and shallow fry balls of dough in a pan on medium heat. Keep turning to cook all sides.

Carefully remove all the doughnuts and cool on a wire rack.

Roll doughnuts in cinnamon and xylitol mixture.
