Chewy Gooey Brownies

What you'll need
 ¾ cup Butter, melted and cooled down
 1 ½ cups Sugar (Coconut sugar for Paleo)
 ½ tsp Vanilla extract
 2 Free-range Eggs, room temperature
 ¾ cup Health Riot Cassava flour
 ½ cup Raw organic Cocoa powder
 ¼ tsp Baking powder
 ¼ tsp Salt
 ¾ cup Good quality Chocolate chips
 ¾ cup Diced Almonds
 1 tbsp Health Riot Cassava flour, to coat the chocolate chips

Preheat oven to 170 degrees Celsius

Coat an 8 x 8 inch square baking dish with butter.

In one bowl, combine the cooled, melted butter, along with the vanilla extract and sugar until smooth and fluffy.

In a second bowl, sift Health Riot Cassava flour, cocoa powder, baking powder and salt.

Beat the eggs, one at a time, into the sugar and butter mixture. Mix well.

Add the flour mixture in 3 additions, mixing slowly until just combined.

Stir the chocolate chips into the tablespoon of Health Riot Cassava flour (this prevents the chips from sinking to the bottom)

Fold the chips and almonds into the batter.

Pour the batter into pan and level off the top.

Bake for 20–25 minutes. Brownies are ready when the edges start to pull away from the sides of the dish. The centre will appear a little wiggly, but will firm once the brownies cool down.
