Brownies with Brazil Nuts

Brownies with Brazil Nuts
What you'll need
 ½ cup Butter, melted and cooled down
 1 ½ cups Xylitol
 ½ tsp Vanilla extract
 2 Free-range Eggs, room temperature
 ¾ cup Health Riot Cassava flour
 ½ cup Raw organic Cocoa powder
 ¼ tsp Baking powder
 ¼ Salt
 ¾ cup Chopped Brazil nuts
 1 tbsp Health Riot Cassava flour (to coat the chocolate chips)
Instructions:

Preheat oven to 170 degrees Celsius.

Coat an 8 x 8 inch square baking dish with butter.

In one bowl, combine the cooled melted butter with the vanilla extract and the xylitol, until smooth and fluffy.

In a second bowl, sift the Health Riot Cassava flour, cocoa powder, baking powder, and salt.

Beat the eggs, one at a time, into the sugar and butter mixture. Mix well.

Add the flour mixture in 3 additions, mixing slowly, until just combined.

Fold the chocolate chips and Brazil nuts into the batter.

Pour the batter into a pan and level off the top.

Bake for 20-25 minutes. The brownies are ready when the edges start to pull away from the sides of the dish. The centre will appear a little wiggly, but will firm once the brownies cool down.
