Brazilian Cheese Balls

This recipe is the most authentic recipe of Brazilian Cheese Bread (pão-de-queijo). It's delicious and naturally gluten-free.

Brazilian Cheese Balls
What you'll need
 1 cup Coconut milk
 ½ cup Coconut oil
 1 tsp Himalayan salt
 2 cups Health Riot Cassava flour
 2 Free-range Eggs
 1 cup Parmesan cheese
 ½ cup Cheddar cheese
Instructions:

Preheat your oven to 210 degrees Celsius. Boil the milk, oil and salt together in a saucepan. Whisking occasionally, bring the mixture to the boil over medium heat. Remove from heat as soon as you see large bubbles coming through the milk.

Add the Health Riot Cassava flour to the saucepan and stir until well combined, ensuring there is no dry flour left.

Transfer the dough to a bowl to cool, and using an electric hand mixer beat the dough at medium speed until it smooths out and has cooled enough that you can hold your finger to the dough for a few seconds.

Whisk each egg separately and add into the mixture one at a time until each is mixed in well.

Beat the cheese into the dough on medium speed. The mixture will resemble a cookie dough.

Using a dessert spoon, scoop round portions of the dough into mounds on a baking tray lined with baking paper.

Put the tray with the balls into the oven, and immediately turn the heat down to 175 degrees Celsius. Bake for 25-30 minutes until the balls are puffed, dry on the outside, and starting to colour.
