Bobotie

Health Riot Cassava twist on traditional bobotie.

Bobotie
What you'll need
 900 g Free-range lean Mince
 1 Onion; finely chopped
 1 Heaped Tsp Mild Curry
 1 Heaped Tsp Turmeric
 Salt to taste
 Meat spice
 1 tsp Xylitol
 7 Large Free-range Eggs
 ¼ cup Coconut milk, plus 1/2 Cup Coconut milk
 ½ cup Health Riot Cassava flour
 4 Bay leaves
 6 tsp White vinegar
Instructions:

Using coconut oil, saute the onions and brown your mince in a thick based non-stick pan.

Add all your ground spices and the xyliol.

Once the meat is nicely browned, add 3 whisked eggs and 1/2 cup of sifted Health Riot Cassava flour, and 1/4 cup of coconut milk.

Take off the heat and transfer to a buttered Pyrex dish.

Whisk the remaining 4 eggs and add the 1/2 cup coconut milk. Stir and pour over the bobotie.

Place the bay leaves half standing up in a few spots of the bobotie.

Bake at 180 degrees Celsius for 20-30 minutes or until golden and the egg mixture has cooked through.
